Rachel Zoe’s Sausage Meat Crack Recipe

You know you want it! Rachel Zoe finished up her season by hosting a party for her staff at her house. It was lovely. There were plenty of hugs and tears.

But there was also a yummy baked sausage – salami thing made!! She referred to it as ‘meat crack’.

I am going to take a guess at the recipe and also experiment by making it over the next couple weeks.

Rachel Zoe’s Meat Crack

1 medium to large salami – at least two pounds
1 large jar of apricot jam (It’s possible this was orange marmalade or peach jam. I will experiment.)
1  1/2 C of honey mustard

*  Preheat oven to 350.
*  Line cookie sheet with quick release aluminum foil for easy clean up.
*  In a small bowl combine the apricot jam and honey mustard.
*  Spoon approximately 3/4 C of this mixture into a separate bowl and refrigerate – to save for dipping
*  Slice sausage most of the way through – but not all the way. You can make the sections as wide as you would like. Thinner sections will be crispier.
*  Lather the meat with the remaining mixture.

Bake for at least 45 minutes.

Remove from oven and serve with dip mixture. Stand back and watch your guests devour!

Me again – We tried it!!

And it was pretty good. We used these ingredients:

baked salami with jam

I suggest you bake it until it is blackened and crispie.

    I have tried to experiment too with this. I used the Hebrew National Salami as well but I think the secret is Duck Sauce, an asian condiment found in grocery stores in the ethnic aisle or in asian food stores. It has apricots and pulp it is sweet and I think this is Rachel’s secret. If you watch the clip where she is preparing it the jar looks exactly like Dynasty brand Duck Sauce.

        Yes! really good and I will be making it tommorow for Thanksgiving so the Fam can nibble on some while we hang out and wait for the Turkey!

      Did you just use the duck sauce alone or did you add the honey mustard with the duk sauce? Thanks.

        Hi Chrissy – we’ll see if Dolce responds. What you could do is mix a little duck sauce with the mustard and see what it tastes like.

        You could bake it without the mustard and just try it in the dip.
